Hi friends!

Spring/summer grilling season is here, and I'm more excited about this than I probably should be.

There's something so satisfying about cooking over an open flame on a warm night—it feels kind of ancestral, and way more interesting than another boring chicken breast in a pan!

If you've been following along, you know I'm ALL about getting back to basics with our food :)

And grilling doesn't get more basic than that. Our ancestors were grilling meat long before we had fancy kitchen gadgets, and there's a reason this cooking method has stuck around for thousands of years!!

Today I'm sharing five of my go-to grilled proteins that never fail to deliver on flavor, plus the sauces and sides that make them absolutely irresistible.

These aren't complicated recipes that require a culinary degree—just simple, quality ingredients prepared the way our bodies actually want them!

1. Grass-Fed Ribeye Steak

This is my personal favorite, and for good reason. Ribeye has the perfect fat-to-protein ratio, which means it stays incredibly juicy and flavorful on the grill. The marbling creates natural basting as it cooks, so you literally can't mess this up.

My method: Season generously with sea salt and black pepper 30 minutes before grilling. Cook over high heat for 3-4 minutes per side for medium-rare. Let it rest for 5 minutes before slicing—this step is non-negotiable.

If you think grilled fish is boring, you haven't tried it my way.

Wild salmon has this rich, buttery flavor that pairs beautifully with the smokiness from the grill. Plus, you're getting all those omega-3s that your brain and hormones are craving.

My method: Brush with olive oil, season with salt, pepper, and fresh dill. Grill skin-side down for 6-8 minutes, then flip for 2-3 minutes. The skin will get crispy and delicious—don't skip eating it.

3. Organic Chicken Thighs

I'm going to be honest with you—chicken breasts are overrated. Thighs are where it's at!! They're more flavorful, harder to overcook, and way more budget-friendly. They also have that perfect fat content that keeps you satisfied for hours.

My method: Marinate in olive oil, lemon juice, garlic, and herbs for at least 2 hours. Grill skin-side down first to get it crispy, then flip and finish cooking through.

4. Grass-Fed Ground Beef Burgers

Forget those frozen patties or pre-seasoned patties from the store. When you make burgers with quality grass-fed ground beef, you're getting a completely different experience!! The flavor is richer, the nutrition is superior, and you can taste the difference immediately.

My method: Form loosely into patties (don't overwork the meat), season with salt and pepper, and grill for 4-5 minutes per side. Keep it simple—good meat doesn't need to be masked with a bunch of stuff.

5. Pasture-Raised Pork Tenderloin

This cut is lean but incredibly tender when cooked properly. Pork tenderloin cooks relatively quickly on the grill, making it perfect for weeknight dinners when you want something special but don't have hours to spend in the kitchen.

My method: Brush with olive oil and season with a simple herb blend. Grill over medium-high heat, turning every 3-4 minutes until it reaches 145°F internal temperature.

Primal Sauces That Actually Enhance Your Meat

Here's where most people go wrong—they smother perfectly good grilled meat with sugar-laden store-bought sauces. These three options will complement your proteins without overwhelming them:

1. Chimichurri Sauce

This is probably my most-used sauce, and it works with literally everything. Fresh herbs, garlic, olive oil, and vinegar create this bright, vibrant flavor that makes even the simplest grilled meat feel gourmet.

Ingredients:

  • 1 cup fresh parsley, finely chopped

  • 1/4 cup fresh cilantro, finely chopped

  • 3 cloves garlic, minced

  • 1/3 cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon red pepper flakes

Mix everything together and let it sit for at least 30 minutes before serving. What I love about it: It's basically a salad in sauce form. You're getting fresh herbs, healthy fats, and zero processed ingredients.

2. Clean Barbecue Sauce

Yes, you can have barbecue sauce that doesn't come from a bottle loaded with high fructose corn syrup. Make your own with tomato paste, apple cider vinegar, raw honey, and spices. It takes maybe 10 minutes and tastes infinitely better than anything from the store.

Ingredients:

  • 1 can (6 oz) tomato paste

  • 1/3 cup apple cider vinegar

  • 1/4 cup raw honey

  • 2 tablespoons coconut aminos

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon sea salt

  • 1/4 teaspoon black pepper

Whisk everything together in a small saucepan and simmer for 5-10 minutes until it thickens slightly. Pro tip: Make a big batch and store it in the fridge. It keeps for weeks and gets better with time.
